It’s been awhile since I had pancakes… and I somehow lost my old trusted recipe. So this time I decided to trust the 7000 reviews on this Allrecipes post. With a few lazy modifications. Also these are the most boring pictures ever. But nobody cares when you’re eating pancakes on a weekend morning 🙂
- Modified from:
- All Recipes Buttermilk Pancakes II
- Makes 5 medium pancakes
- You need:
- 1 large bowl
- 1 spatula or whisk
- 2-cup liquid measuring cup
- Ingredients:
- 1 c all-purpose flour, loose
- 1 Tbsp granulated white sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- dash salt
- 1 c buttermilk
- 2 Tbsp unsalted butter, melted
- 1 large egg

In a large bowl, mix together dry ingredients: 1 c flour, 1 Tbsp sugar, 1 tsp baking powder, 1/2 tsp baking soda and dash salt. Separately, in a 2 cup liquid measuring cup, beat together 1 c buttermilk, 2 Tbsp unsalted butter, melted and 1 large egg. When your partner is just starting to get their lazy butt out of bed, pour wet ingredients into dry and stir with a spatula until just combined.
Pam or lightly oil a large frying pan, and heat the pan to sizzling with medium/high heat. When hot, pour batter onto the hot pan and reduce heat to low. When edges of batter are dry and bubbles are stuck, check for brown-ness and flip, about 3-4 minutes on each side. No harm in checking every minute! Burners are a tricky thing.
